Shintaro is the Head Chef, Beverage Coordinator, and Partner at Bar MOGA in New York City🗽✨ Originally from Hokkaido, Japan, he grew up closely connected to nature and family traditions✨ As a child, he would follow his grandfather on fishing trips and hunts, and accompany his grandmother into the mountains to forage for wild vegetables and herbs, while also tending to the vegetables they grew at home✨✨ Being by their side through each season taught him the value of patience, gratitude, and respect for ingredients✨

These early experiences became the foundation of his deep appreciation for food and shaped the roots of his cooking style✨ Starting as a chef de cuisine, he now oversees both the kitchen and bar, blending Japanese culinary tradition with classics, craft cocktails, and a love for Japanese whisky✨ Inspired by the elegance of 1920s Japan, his style balances precision, creativity, and nostalgia✨✨ Bar MOGA’s signature Omurice, made with house-made ketchup and a three-day demi-glace, reflects this harmony⭐️🍴 The bar is the culmination of Shintaro’s journey-a place where craftsmanship, memory, and the spirit of omotenashi come together to welcome each guest with warmth and intention🤍❤️🤍❤️
